Slow Wanderings' Magic Bean and Sesame Seed Salad.

More tasty summer salad bowl style by Hanlie Joubert of Slow Wanderings blog. (Did we say how much we love collaboration?) This salad proves that green beans are one a bit of a dark horse in the veg kingdom. They’re moreish beyond – and the colder, the better. Adding sesame seeds gives a nuttiness to the flavour.

Green Bean Salad
Serves 6

Ingredients
500g frozen green beans
200g cherry tomatoes
50g sesame seeds
handful of basil leaves
juice of 2 lemons
50ml olive oil
salt and pepper

Place the green beans in boiling water for 5 minutes. Drain and put aside.

Halve the cherry tomatoes and finely chop the basil leaves.

Place the beans in a serving bowl, add tomatoes, basil, olive oil, lemon juice, salt and pepper.

Stir everything together and sprinkle with sesame seeds. Serve cold.
