This salad proves that green beans are one a bit of a dark horse in the veg kingdom. They’re moreish beyond – and the colder, the better. Adding sesame seeds gives a nuttiness to the flavour.
Green Bean Salad
Serves 6
Ingredients
500g frozen green beans
200g cherry tomatoes
50g sesame seeds
handful of basil leaves
juice of 2 lemons
50ml olive oil
salt and pepper
Place the green beans in boiling water for 5 minutes. Drain and put aside.
Halve the cherry tomatoes and finely chop the basil leaves.
Place the beans in a serving bowl, add tomatoes, basil, olive oil, lemon juice, salt and pepper.
Stir everything together and sprinkle with sesame seeds. Serve cold.
